Sweet Potato Candy Recipe
Ingredients:
1 lb of sweet potatoes; boiled, peeled, and mashed
1 c of sugar (granulated)
1 c of water
For the glaze:
1 c of sugar (granulated)
1/4 c of water
Instructions:
Dissolve sugar in water inside a medium-sized saucepan; stir over medium-low heat then cover saucepan and simmer it for 2-3 mins. Remove the cover; continue to cook on moderate heat until it reads 242 degrees F at a sugar thermometer. Add in mashed potatoes onto the hot syrup and cook till it looks like paste then take out from stove.
Beat the potato mixture using a mixer until it becomes cool. Scoop small parts from paste and roll up; place on parchment paper then let it stand for a day.
To make the glaze, boil water with sugar to 234 degrees F on a sugar thermometer. Take out from the heat then brush over the candy.
