Raspberry Marshmallows Recipe
Ingredients:
1/4 c & 3 Tbsps of concentrated juice (raspberry)
1 envelope of gelatine (Knox)
1/2 c of sugar (granulated)
1/2 c of corn syrup (light)
1 fresh egg white (from large egg)
1/4 tsp of almond extract
Instructions:
Spray cooking sheets with vegetable spray and line them with waxed paper then sprinkle sugar on the paper.
Mix gelatine with quarter cup of juice; let it set. Mix the left concentrated juice, sugar, and syrup in a saucepan then heat over low flame; stir constantly until the sugar is dissolved.
Cook for six mins or til it reads (250 degrees F) on the sugar thermometer. Take out from the heat; add in the mixture of gelatine.
Beat the egg white; gradually add the sugar mix and almond extract. Beat continuously until the mixture cools. Transfer the mixture in a bag pipe with the tip designed as a big star. Pipe over the sheets in dollops; let it stand overnight.
