Rainbow Candy Apples Recipe
Ingredients:
4 sticks of lollipop
4 small apples (very red, Cortland or McIntosh or Empire); rinsed, dried, and stemmed*
1 c of sugar (granulated)
2/3 c of water (at room temperature)
1/3 c of corn syrup (light)
1/8 tsp of food coloring (red)*
Instructions:
Insert the stick onto each of the red apples.
Combine water, syrup, and sugar in a saucepan; cook them over moderate heat ’til the sugar dissolves in the mixture, stir constantly. Turn the heat higher and let it boil until the sugar thermometer reads (300 degrees F) for 15-20 mins.
Take out the saucepan from the heat. Stir in the coloring; blend well. Hold the stick then carefully dip apples into the syrup ’til well coated. Do the same for the other apples. Place the coated apples on a parchment paper and let them stand for an hour.
*When using another kind of apple, make sure you use the food coloring that has the same color with the skin of the chosen apples.
