Pecan Toffee Recipe
Ingredients:
1 c of butter (unsalted)
1-1/2 c of sugar (granulated)
1/4 tsp of cream of tartar
1 c of pecans; chopped coarsely
6 oz of chocolate (bittersweet); chopped finely
Instructions:
Grease a 9 inch square pan and line with aluminum foil including the sides then butter the foil too.
Melt butter inside a saucepan on moderate heat then add the cream of tartar with sugar; stir thoroughly until dissolved. Increase the heat then brush (wet pastry brush) the pan sides and cook till mixture reads (310 degrees F) on sugar thermometer; stir occasionally.
Immediately transfer the mixture onto the pan and let it stand for a minute. Garnish chopped chocolate and wait til it softens then spread the softened chocolates using a spatula ’til smooth and melted. Garnish with chopped pecans then refrigerate.
