Pecan Delights Recipe
Ingredients:
2-1/4 c of sugar (brown)
1 c of butter (unsalted)
1 c of corn syrup (light)
1/8 tsp of salt
1 can of milk (condensed, sweetened)
1 tsp of vanilla
1-1/2 lbs of pecans; sliced into half
6 oz of chocolate flakes (semisweet)
6 oz of milk choco flakes
2 Tbsps of shortening
Instructions:
Combine sugar, butter, syrup, and salt in a saucepan then cook on moderate heat till melted. Slowly add the milk then mix thoroughly; continue to cook till sugar thermometer reaches (248 degrees F). Take out from the heat and add vanilla; blend well. Add the halved pecans and incorporate well.
Scoop spoonfuls of the batter on a parchment paper. Chill. Melt the shortening and chocolate flakes in a bain-marie. Spread onto the cookies. Refrigerate before serving.
