Old Fashioned Sponge Candy Recipe

Ingredients:

1 c of sugar (granulated)
1 c of dark syrup (Karo)
1/2 tsp of molasses
1 Tbsp of baking soda (Arm & Hammer)
1 Tbsp of cider vinegar
12 oz of chocolate chips
1 oz of chocolate (bitter)
1/4 bar of paraffin

Instructions:

Cook sugar, syrup, molasses, and cider vinegar to 300 degrees F on a thermometer (for candy); constantly stir to avoid scorching. Take out from the heat then add baking soda and stir carefully and avoid forming bubbles. Carefully pour onto an 8×10 inch buttered pan. Let it settle.

Once cooled, turn it upside-down on a cutting board then cut into a variety of shapes.

Melt chocolate, choco chips, and paraffin on a bain-marie. Dip the candy pieces into the melted chocolate. Let it set on a parchment paper.
