New Mexico Pinon Candy Recipe
Ingredients:
1-1/4 c of shredded piloncillo (or 1 c of dark brown sugar)
1 c of water (at room temperature)
2 Tbsps of butter (unsalted)
1-1/2 c of pine nuts; toasted
1 tsp of vanilla
Instructions:
Mix piloncillo with water and bring it to a boil on a saucepan; constantly stir. Cook, do not stir, (236 degrees F) on a thermometer (for candy). Add in the butter; stir until well blended. Let it cool at about eight mins and do not stir.
Fold in the extract and nuts. Stir until it becomes a little thick, glossy, and enough to coat the nuts. Scoop teaspoonfuls and drop on the parchment paper. Set aside to let it firm.
