Mexican Orange Drops Recipe
Ingredients:
1 c of evaporated milk
2 c of sugar (granulated)
1 c of sugar (granulated)
1/4 c of water (very hot)
1/4 tsp of salt
Orange zests from two oranges; grated
1 c of chopped nuts (walnuts or pecans)
Instructions:
Heat the milk on a bain-marie. Melt one cup of sugar on a large saucepan; once caramelized add in juice and stir. Add heated milk and mix in salt and sugar till dissolved completely. Cover and let it boil then cook for three mins till the steam cleans the crystals clinging on pan sides.
Remove the cover; cook on medium-low heat (238 degrees F). Once cooked, take out from heat then fold in orange zests; Allow it to cool then beat till it becomes rich and creamy; fold in nuts. Scoop a spoonful of candy and wrap it with foil.
