Hawaiian Candy Recipe
Ingredients:
1 c of cream (for whipping)
1/2 c of sugar (brown)
1 c of sugar (granulated)
1/2 c of pineapple (crushed & drained)
1 tsp of ginger (preserved)
1 Tbsp of butter
1/2 c of pecan meats (broken)
1 tsp of vanilla extract
Instructions:
Boil whipping cream using heavy large saucepan then remove heat. Add sugars and pineapple. Stir ’til sugars dissolve. Put back on fire, stirring constantly ’til it boils. Cover pot and continue cooking for three minutes ’til steam can wash away crystals that form on pan’s sides.
Uncover pot then continue cooking on low fire, stirring when necessary, until mixture reach soft ball stage of 238 degrees Fahrenheit. Remove heat then add the rest of ingredients. Let it cool until desired temperature (110 degrees Fahrenheit). Beat mixture ’til creamy and pour on buttered shallow pan and slice into bars.
