Hard Candy Recipe




Hard Candy Recipe

Ingredients:

1 c of sugar (granulated)
1/4 c of sugar (brown)
1/4 c of corn syrup (light)
1 Tbsp of food color (black)
1/4 tsp of anise extract (or anise seeds, pulverized)
1/4 c of water

Instructions:

Cook sugars, corn syrup and water in pot on moderate fire, stirring. When mixture has already boiled, wash down crystal sugars from pot’s sides. Put thermometer (for candy) in pot then cook (without stirring) ’til mixture reach soft crack stage 290 deg Fahrenheit. Take pot away from heat then add food color and anise flavor, stirring them gently.

Using teaspoon, pour patties (size of quarters) on greased cookie sheets. If candy mix becomes very firm and is difficult to spoon, reheat slowly ’til soft. Let drops cool but do not put them inside refrigerator. Wrap each drops in cellophane or (wax) paper.
