Gumdrops Recipe
Ingredients:
1 c of sugar (granulated)
1 c corn syrup (light)
1 box fruit pectin (powdered, 1 & 3/4 ozs)
1/2 tsp of baking soda
3/4 c of water
sugar for coating (granulated)
Food flavoring and color
For Cherry:
7 drops of food color (red)
1 tsp of cherry (extract)
For Peppermint:
7 drops of food color (green)
1 tsp of peppermint (extract)
For Spearmint
7 drops food color (green)
1 tsp of spearmint (extract)
For Orange:
1 drop of food color (red)
2 tsps of orange (extract)
For Lemon:
10 drops of food color (yellow)
2 tsps of lemon (extract)
Instructions:
Stir syrup and sugar in two-quart saucepan. Using separate two-quart saucepan, combine pectin, water and baking soda until foamy. Place pans on high fire and cook, stirring simultaneously, ’til foam becomes thin in pectin mix and ’til sugar mix rapidly boils. Both takes approximately 3- 5 min.
Pour pectin mix slowly in thin flow to sugar mix; stir constantly while pouring. Cook while stirring mixture 1 additional minute. Take away from fire then add food color and flavor.
Pour mixture on butter-coated baking pan and let it stand (room temperature) ’til firm and cool, approximately 4 hrs. Cut into bars and coat with confectioners sugar. Keep in containers, covered loosely (room temperature).
