Golden Coconut Candy Recipe
Ingredients:
2.5 c of coconut; shredded
1/2 c of water
1 & 1/4 c of sugar (granulated)
2 Tbsps of butter
2 c of milk
3 yolks of egg
A stick of cinnamon
Instructions:
Preheat your oven up to 375 degrees Fahrenheit. Put coconut, shredded, on baking sheet containing foil (aluminum) on top. Toast fifteen mins, turning from time to time, browning the sides. Let it cool then set it aside.
Prepare 8″ square baking pan by greasing it and placing greased parchment paper on top. Using huge pot, cook water, butter, sugar and cinnamon on low fire, slowly stirring, ’til sugar is dissolved. Cover pot then cook on moderate fire for 2-3 minutes.
Add coconut then cook ’til transparent, then add yolks mixed and beaten together with milk. Stirring always ’til you can see pan’s bottom. Transfer mixture on prepared baking pan.
Bake ’til gold brown in color, about 45 mins. Let it cool 24 hours. Slice into bars then wrap in cellophane. Keep in sealed containers; place parchment paper on container’s bottom as lining. Candy is kept for weeks prior to using it. Creates about 24 pieces.
