Ginger-Orange Turkish Delight (Rabat Lokum) Recipe
Ingredients:
2.5 ozs of gelatine (plain)
20 ozs of water
1/2 lb of sugar (confectioners’)
1.5 lbs of sugar (granulated)
1 Tbsp of ginger (fresh)
1 oz orange peel; pounded finely & crystallized
1 squeezed juice from lemon
Instructions:
Cool gelatin and water in saucepan on low fire, constantly stirring. Put sugar then stir ’til it melts. Add in ginger as well as (orange) peel, still stirring, then boil quickly for 10-15 mins. Syrup will be aromatic and clear. Remove mixture from heat then stir with (lemon) juice.
Pour mixture on wet 8″ rectangular pan then let it sit about 24 hrs. Then transfer on a chopping board sprinkled with sugar (confectioners’). Sift additional sugar on top. Slice into pieces of chunks using sharp knife then roll them on liberal amounts of confectioner’s . Pack in sealed tins containing more amounts of confectioners.
