English Toffee Recipe
Ingredients:
1/2 lb of chocolate (milk)
2 c of almonds (salted)
2 c of margarine or butter
2 c of sugar (granulated)
2 Tbsps of corn syrup (white)
1 tsp of vanilla extract
6 Tbsps of water
Instructions:
Melt chocolate using double boiler on lukewarm 115 degrees F water and Stir from time to time. Slice lengthwise 1 c of almonds into half. Chop the rest of nuts coarsely.
Melt butter/margarine using heavy fry pan and put sugar, sliced almonds, water and syrup. Stir mixture ’til sugar’s blended. Cook gently ’til when little amounts placed into (cold) water become hard threads, about 290 degrees F. Stir from time to time to avoid burning and pour vanilla.
Spread mixture with 1/4″ thick into 10″ x 15″ buttered baking molds or pan. Let it cool before spreading melted choco on top. Garnish with the rest of almond nuts. When this stiffens, break it into several pieces and store it in sealed container in between layers of (wax) paper. Creates approximately 3 lbs of candy.
