Coconut Penuche Patties Recipe

Ingredients:

1.5 c of sugar (granulated)
1 c of sugar (light brown), packed firmly
3 Tbsps of corn syrup (light)
1 c of cream (light)
1 c of coconut (grated finely)
4 Tbsps of butter
1 tsp of vanilla extract
Approximately 18 pcs pecans

Instructions:

In heavy and large saucepan, mix sugars, syrup as well as cream and boil on low fire, stirring always. Let boil slowly. Don’t stir until mixture can form into soft little ball into water (cold), 234 degrees Fahrenheit in candy thermometer. Take away from fire and add grated coconut, tsp of vanilla (extract) as well as 4 Tbsps butter. Don’t stir, allow to cool ’til lukewarm.

When lukewarm, stir mixture ’til blended. Drop quickly using teaspoonful on waxed paper and press gently pecans into each piece and allow to stand ’til firm, approximately 3 hrs. Wrap the patties using waxed paper.
