Coconut Candy Recipe
Ingredients:
30 pcs vanilla wafers
4 c of sugar (granulated)
4 Tbsps of water
2 c of water
5 c of coconut, shredded
A stick of cinnamon
Food color (red)
Instructions:
Grease 8″ square baking pan then arrange wafers on it. Using blender, combine coconut and 4 Tbsps of water then grind ’til it becomes fine. Using huge pot, mix 4 c of sugar (granulated) 2 c of water as well as cinnamon; cook on low fire, stirring slowly, ’til sugar is dissolved.
Cover pot and allow to cook on moderate fire for 2-3 minutes, washing down the crystal sugars from pot’s sides. Uncover pot then cook into soft-ball period of 234 degrees F or ’til syrup becomes flexible ball, which flattens if take away from water (cold).
Take away from fire and add in coconut. Put into huge bowl then beat (moderate speed) ’til mixture becomes paste. Half mixture into half and add red coloring to one half.
Fill pan half-full with uncolored coconut mix and top pink mixture. Allow to cool inside airtight container in 24 hours; cut into 6″ x 2″ shapes and wrap them in cellophane. Store inside dry containers. Creates about four 6″ rectangles. Consume within a month.
