Marcel Desaulnier’s Chocolate Maple Walnut Praline Recipe
Ingredients:
1-1/2 c of walnuts; toasted
1/2 c of maple syrup (pure, grade A)
2 c of sugar (granulated)
1/2 tsp of lemon juice (freshly squeezed)
2 oz of chocolate (unsweetened); chopped to 1/4 inch size
Instructions:
Preheat the oven (325 degrees F).
Heat syrup on a saucepan above medium heat, let it boil then reduce heat; let it continue boiling for another ten minutes while stirring it constantly. Remove from heat then mix in walnuts and place it on a cooking sheet; spread evenly on half the sheet. Place it on the side.
Mix the juice and sugar on a saucepan then whisk thoroughly and let it caramelize over medium heat for ten minutes. Stir constantly to make it smooth; take out saucepan away from heat then fold in chocolate until they melt. Pour over walnuts and let it set for half an hour.
Turn your praline upside down on a dry chopping board and use knife (serrated) to slice or saw to pieces.
