Caramel Candy Recipe
Ingredients:
2 c of sugar (granulated)
2 c of cream (for whipping)
2 c of pecans; chopped
1/2 c of butter
1 & 3/4 c of light corn syrup
1 tsp of vanilla extract
1/8 tsp of salt
Instructions:
Mix 2 c of sugar, 2 c of whipping cream, 2 c of pecans, 1 and 3/4 c of light corn syrup and 1/2 c of butter together. Cook in a heavy and huge boiler – to prevent boiling water from spilling – until mixture reaches firm-ball stage of 238 degrees Fahrenheit on candy thermometer.
Add vanilla and salt. Drop into butter-coated 12″ x 9″ baking pan then let it cool for hours. Slice into bars when completely cooled then wrap with waxed paper. Creates about 38 bars.
