Candied Nopalitos (Nopalitos en almibar) Recipe
Ingredients:
4 pcs paddles of cactus from young ones; remove spines
2 c of sugar (granulated)
1 c of water
Instructions:
Cut 1″ x 3″ Nopalitos pieces. You can also cut several shape of Nopalitos with cutter (for cookies). Rinse with water (cold) ’til the sticky substance along sliced areas vanishes. Boil sugar and water on moderate to moderate-high heat then add Nopalitos. Reduce the heat to simmer, 15 min.
Remove Nopalitos using tongs and arrange on plate. Scoop syrup on them. Best served as a dessert or as coffee companion.
