Candied Grapefruit Peel Recipe
Ingredients:
Peels of 3 pcs of grapefruits (large slices)
2 c of sugar (granulated)
1/4 c of corn syrup (light)
1 c of water
Instructions:
Place peels and in saucepan then pour in water. Boil on moderate-high heat and then lower heat later on. Let simmer. Continue cooking until peels become soft, approximately for 25 mins.
Drain peels and remove white grapefruit pith from peels with small knife. Leave only the outer skins; slice into strips, thin. Boil 2 c sugar, 1 c of water as well as 1/4 c of syrup in saucepan on fire set to high.
Lower heat and then let simmer; add sliced peels and cook ’til translucent, approximately 45-50 minutes. Remove strips from water then drain.
Toss sliced peels into a sugar-layered huge bowl then coat the sliced peels evenly. Arrange the sliced peels on wax paper then let dry 1-2 hrs. Store dried candies in covered container in room temp. Consume within two weeks.
