Cactus Rubies Recipe
Ingredients:
2 c of sugar; granulated
1 and 1/3 c of syrup (light corn)
1.5 c of cactus juice (red)
2 packs of fruit pectin (1 and 3/4 oz); powdered
1 tsp of soda (baking)
Instructions:
To gain cactus juice, collect the ripe fruits of a cactus (pear) using pincers. Wash the fruits using a container w/ flowing water. Boil the fruits ’til they become soft, crushing and slicing fruit from time to time to free the fruit’s juice.
Use a piece of cloth and sieve fruit juice. Use 2 big pans; using a pan blend first 2 ingredients of the recipe and let it boil fully. Using the other pan, also cook the last 3 ingredients ’til foaming stops; whisk the mixtures in the 2 pans.
Place fruit juice mixture into the sugar mixture, let it boil for a couple of minutes while whisking continually. Then take it out of the burner, and stir again to dissipate bubbles ’til candy clears.
Prepare a glass dish (10 x 6 in) lined with butter and pour in the mixture. Let it cool at for a number of hours at room temp. Then flip it on a paper (wax) sprinkled with sugar; slice in squares plus recoat it with sugar.
