Brown Candy Recipe
Ingredients:
6 c of sugar (granulated)
2 c of cream (light)
1/4 tsp of baking soda (Arm & Hammer)
1 Tbsp of corn syrup (white)
1/4 lb of butter (unsalted)
1 tsp of vanilla
2 lbs of pecans; chopped finely
Instructions:
Melt (2 cups) sugar on a skillet above gentle heat. Stir constantly to avoid scorching. Continue on cooking until sugar melts and has turned golden brown or caramelized.
When sugar starts heating on the skillet, combine the other sugar with syrup and cream on a large pot above gentle heat. Cooking it along side with the caramelizing sugar.
When all of cooked sugar on the skillet has melted, gradually pour onto the pot. Keep the heat very low and stir continuously. Continue on cooking while constantly stirring till mixture reaches (242 degrees F) on a sugar thermometer.
Take out from the heat then combine in soda immediately; stir thoroughly as mixture foams. Once mixed, stir in butter. Continue stirring to let the butter melt. Stop stirring once butter has melted; allow to stand for twenty mins.
Add in vanilla and heat mixture. Use wooden ladle to beat mixture till it becomes heavy and thick, then the shade turns dull losing its gloss. Add in pecans; mix thoroughly. Transfer onto buttered square baking pan. Allow to cool for a while and cut to squares.
