Apricot Roll Recipe
Ingredients:
2 c of sugar (granulated)
1 c of milk
12 oz of dried apricots; finely chopped
1 Tbsp of butter (unsalted)
2 c of pecans; chopped
1 tsp of vanilla
1/16 tsp of salt
Instructions:
Boil the sugar with the milk until mixture becomes thick. Cook till it reaches 235 degrees Fahrenheit on the sugar thermometer while constantly stirring. Add the apricots then boil till melted with syrup; temperature reaching 230 degrees Fahrenheit.
Take out from the heat; beat thoroughly. Add vanilla, salt, butter, and pecans. Continue beating until candy starts to get hard. Pour on a smooth wet cloth. Proceed rolling candy to your desired length; let it cool and store inside the refrigerator. Slice thinly and serve.
