Almond Cream Confections Recipe
Ingredients:
1/2 c of butter (unsalted)
1/4 c of sugar (granulated)
2 Tbsps of powdered cocoa
2 tsps of vanilla
1/4 tsp of salt
1 pc of egg; beaten slightly
1 c of almonds; slivered, toasted, chopped
1-3/4 c of wafer crumbs (vanilla)
1/2 c flaked coconut
2 oz of chocolate (semisweet)
For the Filling:
1/3 c of butter; softened
4 Tbsps of milk
1/2 tsp of vanilla extract
3 c of powdered sugar; sifted
Instructions:
Combine butter, sugar, powered cocoa, vanilla, salt, and eggs inside a saucepan then cook above gentle heat. Stir constantly till the butter has melted and the mixture thickens. Take out from the heat.
Immediately add the crumbs, coconut, and almonds; mix well. Transfer onto a 9 inch square baking pan then press down firmly; cover tight then chill.
Take out from the pan then cut to squares. Arrange on the baking sheets about half an inch apart. Melt the semisweet chocolates then place inside a piping bag. Pipe over the (cream) filling.
To make the filling, beat the butter using a mixer until it becomes creamy. Add vanilla and milk while continuously beating. Gradually add powdered sugar and mix till smooth
