Almond Butter Crunch Recipe
Ingredients:
1 c of butter (unsalted)
1-1/3 c of sugar (granulated)
1 Tbsp of corn syrup (light)
3 Tbsps of water
4-1/2 oz of milk chocolate (4 bars); melted
1 c of almonds; blanched, toasted and chopped coarsely
1 c of almonds; blanched, toasted and chopped finely
Instructions:
Melt the butter on a saucepan then add syrup, water, and sugar. Cook, while stirring frequently, until it reaches 300 degrees F on the sugar thermometer. When temperature comes to 280 degrees F, immediately add the nuts chopped coarsely.
Transfer the mixture onto a greased 13×9x2 inch baking pan. Let it cool completely. Turn it out onto a parchment paper. Drizzle 1/2 of melted chocolate then 1/2 nuts that are chopped finely and cover it with parchment paper. Turn it upside down and spread the left chocolates then the nuts. Refrigerate to make it firm. Break into small parts.
